Taco Soup

Ok so when I made this I forgot to take a pic of it but this is what it looks like...I have to have pics when I look at recipes so I did the same for you...Enjoy
Taco Soup -
"The olives are optional—but I like this snappy Mexican soup better with them.

Ingredients:
Jalapenos
Chopped green onions
Grated cheese
Sour cream
Corn chips
1 1-ounce package ranch salad dressing mix
1 1 1/4-ounce package taco seasoning mix
1/2 cup green olives, sliced (optional)
1 small can black olives, drained and sliced (optional)
2 4 1/2-ounce cans diced green chilies
1 14 1/2-ounce can tomatoes with chilies
1 14 1/2-ounce can diced tomatoes
1 14 1/2-ounce can mexican tomatoes
1 15 1/4-ounce can whole kernal corn, drained
1 15 1/2-ounce cans pink kidney beans
2 15-1/2 ounce cans pinto beans
2 cup diced onions
2 lb ground beef

Directions
Brown the ground beef and onions in a large skillet; drain the excess fat, then transfer the browned beef and onions to a large crackpot or a stockpot. Add the beans, corn, green onions, tomatoes, chilies, olives, and seasonings, and cook on low setting all day (6 to 8 hours) if using a crockpot, or simmer over low heat for about 1 hour in a stockpot on the stove. To serve, place a few corn chips in each bowl and ladle soup over them. Top with sour cream, cheese, and jalapenos.

Servings: 12 to 16 servings
Prep Time: 15 min
Cook Time: 8 hours crock pot, 1 hour stock pot method
Difficulty: Easy"

Coconut Macaroons

2-1/2 cups flaked coconut
1/3 cup all purpose flour
1/8 tsp salt
2/3 cup sweetened condensed milk
1 tsp vanilla

In small bowl, combine the coconut, flour ans salt. Add milk and vanilla..Mix well (batter will be stiff)

Drop by tablespoonfuls 1 in apart onto a greased baking sheet.

Bake at 350 for 15-20 mins or till golden brown.Remove to wire racks


Mommy's Helper

Joredn is such a helper and I love it..He help's out so much..Here's some pics of him trying to do the dishes and putting them away lol...I was cooking dinner and he went and got his stool and started washing he is such a good boy...He also makes his bed in the morning and helps washing his clothes and so much more...His wife is going to love that he likes to help

Run Away Socks.......

If there is one thing that bug's me more then anythng when your folding clothes and you have a missing sock and them you have to start a missing sock hunt and there no fun when you can't find them...Thank god i always end up finding them but still it's a pain!!

Ice Pops


So now that's it's summer I wanted to make Jorden some Grape Kool-aid ice pops... I have never let Jorden have Kool-aid before cuz of the sugar but I used Splenda to make them so it works out lol...Here is the work of art all done...I also am really glad I found such cool Ice pop makers :)
He sure did enjoy them

Strawberry Cheesecake


  • 1 cup low-fat cottage cheese
  • 1 tbsp vanilla extract
  • 3 tbsp Splenda
  • 12oz fat-free cream cheese, softened at room trmp
  • 1 cup egg substitute
  • 1 ready made crust
  • 1/2 cup cup of sour-cream
  • 2 tsp Splenda

Directions:

  1. preheat oven to 350
  2. spoon cottage cheese into blender & blend untill smooth, about 30 sec. Add vanilla and Splenda, blend foe about 15 more sec
  3. Add softened cream cheese and blend for 30 sec, while blending add egg and blend untill smooth about 45 sec
  4. pour cheese filling into ready made crust ans bake for about 35 mins
  5. remove cheesecake and let cool for 15 mins then cover and refrigerate for 2 hours
  6. prior to serving in small mixing bowl combine sour cream and splenda
  7. slice and top off with sliced strawberrys and sour cream mix and enjoy
  8. I left out the sour cream on the top :)

Strawberry Delight

Cut up 2 pounds of fresh Strawberries and top of with Splenda and Splenda Brown Sugar and top off with some Cocount refrigerate for about 30 to 60 mins and Enjoy

Clean Plate Club......

It was good to add Jorden to the Clean Plate Club on a Sunday evening....What a beautiful night ended with a movie and popcorn!!
Of all the hats I wear, my motherly chef hat is my favorite
Wonderful dinner with big rewards :)

Summer Days

I love the lazy summer day's!!! Now Jorden and I need to plan a beach trip and we would be good :)
